Cilantro Lime Rice

3 cups Water

3 cups Rice
¼ cups Fresh Lime Juice
¼ cups Onion, finely chopped
1 can Green Chilies
2 cloves Garlic
½ bunches Cilantro
2 Tablespoons Chicken Boullion

Mix all ingredients in large pot.  Bring to a boil, cover and simmer for 20 minutes.  Squeeze extra lime juice over top if desired.

Yum!  I served this rice along with black beans and sauteed chicken.  I used short-grain white rice, and next time I will definitely use long grain so it doesn't stick together as much.
